I love Broccoli, and I love cheese, but after a lot of research, I’ve really tried to cut a LOT of dairy out of my diet. And since I’m a huge fan of soup, I decided to make some shit up and throw it all together and hope it tasted good… And it did! So I decided to share! Please note: Use Organic as much as possible 🙂
This soup is vegetarian, and gluten free. (I know it sounds like I sucked the life out of it, but I didn’t.)
What you need:
1 head of Organic Broccoli (duhhh)
1 Medium onion
2/3 cup of Nutritional Yeast (don’t worry, this isn’t bad for you, in fact is a vegetable protein source-which mimics the taste of cheese #winning) AND I didn’t measure this super closely so feel free to always add more
3 Tbsp of Organic Ghee (which is a fancy term for clarified butter-you can also make your own, but I do not.) Remember healthy fat is NOT the enemy in your fitness goals… Sugar and chemicals are!
3 Garlic Cloves Minced
1 1/2 tsp of Himalayan salt
1/4 tsp of pepper (but if you like the spice, free pour that shit)
3 tbs of COCONUT flour
900 mL of no salt vegetable broth (or if not concerned about animals being in your soup, you can use no sodium chicken broth)
2 Cups of Cashew milk (this is the creamiest of the “other” kinds of milk)
