I love Broccoli, and I love cheese, but after a lot of research, I’ve really tried to cut a LOT of dairy out of my diet.  And since I’m a huge fan of soup, I decided to make some shit up and throw it all together and hope it tasted good… And it did! So I decided to share! Please note: Use Organic as much as possible 🙂

This soup is vegetarian, and gluten free. (I know it sounds like I sucked the life out of it, but I didn’t.)

What you need:

1 head of Organic Broccoli (duhhh)
1 Medium onion
2/3 cup of Nutritional Yeast (don’t worry, this isn’t bad for you, in fact is a vegetable protein source-which mimics the taste of cheese #winning) AND I didn’t measure this super closely so feel free to always add more
3 Tbsp of Organic Ghee (which is a fancy term for clarified butter-you can also make your own, but I do not.) Remember healthy fat is NOT the enemy in your fitness goals… Sugar and chemicals are!
3 Garlic Cloves Minced
1 1/2 tsp of Himalayan salt
1/4 tsp of pepper (but if you like the spice, free pour that shit)
3 tbs of COCONUT flour
900 mL of no salt vegetable broth (or if not concerned about animals being in your soup, you can use no sodium chicken broth)
2 Cups of Cashew milk (this is the creamiest of the “other” kinds of milk)

Instructions

  • TRIM and finely chop broccoli, keeping stems and florets separate (6 cups). Don’t be me-I didn’t separate the stems and florets at first.
  • MELT Ghee in a large pot over medium. Add onion and broccoli stems. Cook, stirring occasionally, until stems begin to soften, about 7 min. Add garlic, salt and pepper and stir until fragrant, 2 min. Add coconut flour and cook for 1 min.
  • GRADUALLY stir in broth and cashew milk. Bring to a boil, then reduce heat to medium-low. Simmer until stems are fork-tender, about 4 min, then add florets and simmer until tender, about 4 more min. Remove from heat.
  • PURÉE soup with an immersion blender until smooth. Return pot to heat, reduced to low, and stir in cheddar. Ladle into bowls. REMEMBER to burp the lid of your blender if you use a big blender. Or cover it with with a dish cloth so that if the lid does explode off it doesn’t burn you. You can also garnish with whatever floats your boat, I used pepper and parsley.And lastly take a picture and tag me in it!

I couldn’t be more excited to hear the news today that Beachbody coaching will be available THIS year in the UK.  Since joining as a coach in 2013 when it was opened up in Canada, my entire life has changed.  I’ve met some of the most amazing, genuine and kind hearted people. I’ve learned more about health and nutrition than I ever even knew possible. My husband and I have been able to leave our full-time corporate jobs to support people with their health, fitness and business goals and we couldn’t be happier! But let me fill you in as to why YOU should be excited!.

 

1) Who is Erin Carrasco and Mombie Fitness UK

Erin Carrasco is a mom of three, married to a pretty awesome guy (going on 19 years together this year!), and pretty kick ass business owner. She’s a 2015 Elite coach, 6 star diamond, All Star Legend–Which just means, I help a LOT of people with their goals. All of those accolades really don’t equate much to you–and they shouldn’t! I remember when I first became a coach, I only did it to get a little bit of “me” time after having my 3rd baby! I really didn’t want to sell anything, and I kind of like getting a discount on my stuff, so I agreed to sign up.  I was a busy working mum before going on Maternity leave, I worked in the HR field and LOVED it! And this was only going to be a hobby I did on the “side”… Until it bloomed into something amazing… almost by accident!

I started to share my progress (scary BUT I did it for my own accountability), and little by little I would get messages from my other mum friends, wanting to know HOW on earth I had the energy to work out with my three kids running circles around me. And that is when Mombie Fitness was created. We were basically a group of mums, tired, and so vegged out on netflix that we just got tired of being on the couch. Little by little people started to join us and in 2016 we become an Elite team. My husband and I were the first team in Canada to be an Elite couple with separate businesses.  We created a 6 figure income with coaching and many of the women on my team were able to also leave their jobs, some were able to add an extra sport to their kids extracurricular activities, but for some, it meant actually being able to put food on the table.

2) What does it mean to be a Beachbody coach?

I remember the word “coach” holding me back! I thought, I’m not in the best shape of my life-WHY would someone join me. I’m not a nutritionist or personal trainer-WHY would someone join me. I’m not extroverted, HOW on earth am I going to be “all out there” on social media.  and so on.  So here is what it means. It means you work on YOU first. You decide to be the coach in your own corner (along with my help), you work on your health and fitness goals (each of us has different ones), and you share them with people (we teach you how to do this without being salesy). Like I said before, when I started coaching, I only wanted to get into shape after my third baby, the reason I do it now, is SO much different, but we all start somewhere.  You are there to stand as an example. Lead the way by pushing through your limiting belief about yourself when it comes to your health and fitness goals, and when you are ready to share that? THAT is when your journey inspires everyone else.  And just in case you don’t believe you can do this? I believe in your ability to do this if you are reading this.  There IS a reason you stumbled upon this post today. Coaches help others when they help themselves lead healthy and fulfilling lives.

3)What do Beachbody coaches do in the UK?

Beachbody coaches in the UK will do what we do here in Canada and what they do in the US. We help people with their health and fitness by running accountability groups online. Everything we do is done online, so it does not matter what time zone you are in, there will always be access to information! We train our team about how to utilize their time efficiently so that you can still build a business, work on your fitness, and help others.

You get to help others lose weight, get healthier, and become more fit.
You will have an additional accountability as you try to reach your own fitness goals.
You will get 25% of all of the Beachbody products.
Beachbody provides you with your own personalized website (online store) and they handle all of the inventory, shipping and customer service. So woo hoo you don’t need to hold stock OR ship anything yourself!
You earn a 25% commission on all sales and you also earn team cycle bonuses. Your income potential is unlimited. It grows as you do!
You are a business owner and can start building a residual income.
You become part of an incredible community of amazing people who are just like you trying to get better!

 

4)Who can be a Beachbody coach in the UK?

Anyone over the age of 18 can be a Beachbody coach in the UK. You can be a stay at home mum, a work at home mum, a work outside the home mum, a barista, customer service rep, barrister, physician, football player as long as your passion is to help others get lead healthier lives, you qualify.

5) Do you have to be a personal trainer to be a Beachbody coach in the UK?

NO! You do NOT have to be! The beautiful thing about what we do as coaches is that we don’t have create the programs (that’s done for us BY expert trainers and nutritionists). Our job as coaches is to be there for them when they want to give up, to be there for them when they don’t think they can do it. Our job is to lead by example and by leading by example, we motivate others to never give up.

6)Do you have to be a nutritionist to be a Beachbody coach in the UK?

No! (see above) Because all of our programs come with a meal plan, you WILL learn things about nutrition as you go along (which is pretty cool!)

7) When will Beachbody coaching be available in the UK

Beachbody coaching will be available in the UK later this year! BUT if you are super excited to get started make sure you fill out the form above so that I can reach you when it becomes available.

Taco Salad-the simple way.

One of my favourite meals to make is Taco’s BUT all the carbs just aren’t on my meal plan right now, cause I’m not the type who has just one or TWO tacos… I’m a 5/6 kind of taco person SO, I traded in all my shells for a few organic taco chips and I feel just as satisfied.

Part two of my growing “issue’s” with Taco’s… The seasoning… Between the sodium, and the sugar and the chemicals.. YES, I’m talking chemicals… DUDES, seriously go look at your taco seasoning (not including epicure)… I couldn’t believe all the extra crap in there!   And I know you could make your own but I was always like, ain’t no one got time for that…  Except I was wrong. It was SERIOUSLY SO easy and fast AND i’ll NEVER buy store bought again!

Here is the Taco Seasoning Recipe I use (buy Organic spices when you can):

1 tablespoon Chilli Powder
1/4 tsp Garlic Powder*
1/4 tsp Onion Powder *
1/4 tsp crushed red pepper flakes
1/4 teaspoon dried oregano (yes really, oregano)
1/2 tsp paprika
1-1/2 ground cumin
1 tsp Salt ( I like Himalayan)
1 tsp black pepper

 

Healthy Taco Salad
A few things, I add a handful of tortilla chips to my salad to give it crunch and IF you desperately need sour cream swap it out for plain greek yogurt! But Basically Romain lettuce, tomatoes, Cheddar cheese and ground chicken are my go to’s. As our family doesn’t eat red meat and my kids are vegetarians, beef just isn’t something we buy.  If you want to use the Veggie Crumble or ground round as a vegetarian options you can season the same way!

After I’ve cooked up the ground chicken/turkey for myself I will also heat up some garden crumble for the kids stuff, and usually make them some soft tacos with whole wheat wraps. I would really like to make some paleo wraps next time… so stay tuned!

Eeek! I’m super excited to share with you that THIS year, you no longer will need to live in Canada or the US to be a apart of the coaching opportunity!

When I first fell in love with this business, it wasn’t a business for me, it was about having some ME time. After having 3 kids, and trying to keep it all together, I realized I had fallen into a rut of exhaustion and binge watching tv.  So like I said, I didn’t even REALIZE it was a business and I only started to workout-because I wanted to get my Pre baby body back. After having 3 kids… I just wanted to not have a spare tire hovering around my midsection.

Over the last 3 years I’ve been able to help other women build incredible businesses WHILE they got to stay at home with their kids and add income to their families! Many have retired from their day jobs, a couple were able to buy additional rental properties, but what I hear most of all (and most importantly) by putting their health and fitness first again, they found themselves. They started to be happier, their marriages improved, and they found confidence in themselves they never knew existed. THIS is why I am a coach. To help other women believe in themselves, find their inner super hero’s and be WITH their family instead of away.  Was it easy? No! But nothing in this life worth having is!

We’ve been able to do things we never dreamed imaginable!  My husband and I both had Corporate Jobs… He worked for Microsoft and I worked in Human Resources for one of the largest retail stores in Canada called Loblaw. AND we LOVED our jobs! The only thing was…we BOTH travelled-ALL the time. We were like ships passing in the wind. Not only were we rarely home, but we missed out on a lot of our kids firsts. That was the hard part.  And when we started this little fitness thing, we never dreamed it would turn into this!

My proudest moment was when I told my mom (single mom, raised 3 kids, had to declare bankruptcy, and sell everything we owned…) I was taking her to Paris for her 70th birthday… (Feel free to watch this short video-grab your tissues!)

And we had a BLAST! Being able to spoil my mom for 10 days in Europe was a dream come true for me. And it wouldn’t have been possible with out this business we created!  But my goal has shifted… I want to help MORE women do this for their family, I want more women to be confident and not hate walking into their closet. I want women to feel secure when they get their beautiful bodies on the beach! AND I mean EVERY size of body. My goal is not to get you to a size 2. My goal is to help you feel confident in YOUR skin because fitness comes in EVERY size. As a hypothyroid mom, my journey is slow BUT its not so much about what is on the outside… as what’s inside.

So I was VERY spoiled for christmas and got a new apple watch! And I have to say, I thought I would HATE it, but I don’t!

And TODAY I decided to try it out for my workout! Not only is there an app for your apple watch, but it pairs with either your apple TV or your Chrome Cast!

All you have to do is pair your phone and your apple watch (which you should have already done upon set up) and download the BOD (beachbody on demand) app,  and open it up on your watch, while you hit stream from whatever work out you want on your phone! SO awesome!

Today I chose Turbo Fire 45, and burnt over 900 calories… WHAT?! Cray cray! However, I had to restart my workout twice because apparently I was popular today on my phone and had two calls interrupt my workout and it restarted the entire thing… BOOOOO

So my advice to you is to set up your phone to a do not disturb mode before heading into your workout to make sure it’s uninterrupted!
